National Vegetarian Week – A Recipe Suggestion from Elizabeth B in 8S

This week is National Vegetarian Week and the Vegetarian Society have lots of tasty recipe ideas on their website that you may wish to try.

Recently, Elizabeth B from 8S shared a recipe she had seen on TikTok with Mrs Lee, our Head of Practical Cookery. The dish looks so delicious that our Year 7 and 8 students will be making it in their lessons very soon. Mrs Lee has kindly shared the recipe with us below. Buon appetito!

You will need:

100g cherry tomatoes
2 tablespoons olive oil
35ml white wine
80g feta cheese
200g pasta of your choice
fresh basil, for serving

Method:
  1. Heat the oven to 200°C.
  2. In a 13 x 9-inch baking dish, stir together the cherry tomatoes, 2 tablespoons olive oil and ½ teaspoon black pepper.
  3. Push the tomatoes to the sides of the dish then place the block of feta cheese in the centre.
  4. Drizzle the remaining 1 tablespoon olive oil on top of the feta.
  5. Drizzle the white wine all around the feta then bake until the cheese has softened and the tomatoes are roasted, about 30 minutes.
  6. While the feta is baking, cook the pasta and cook as per instructions.
  7. Remove the baking dish from the oven and using a large spoon, mash the feta and stir it together with the tomatoes.
  8. Add the pasta to the baking dish, stirring well to combine.
  9. Garnish the pasta with the basil and serve
