Our cookery suite, ‘Haute Quisine’, was steaming with excited anticipation on Wednesday afternoon as our Year 12 students embarked upon their studies for the Leiths ‘Introductory Certificate in Food and Wine’.

Leiths School was established in 1969 by Prue Leith to provide professional training for career cooks and short courses for amateurs. Pupils studying for this nationally recognised qualification develop vital life skills for independent living, which, should they so choose, could open up areas of possible employment.

During the introductory lesson, the visiting Leiths teacher engaged the girls with a history of Leiths School, the course objectives and curriculum information. After a teacher led demonstration, the students' own skills were put to the test as they practised the correct use of knives.

Next week the pupils will be cooking for the first time and will attempt vichyssoise and cheese scones.
